200g mixed leaves (e.g. butter lettuce, baby spinach, rocket, watercress)
1 bunch of flat leaf parsley, leaves picked
1 bunch of coriander, leaves picked
1 bunch of mint, leaves picked
½ bunch basil, leaves picked
1 orange, peeled and segmented
1 ruby grapefruit, peeled and segmented
½ cup Moroccan dried black olives, pitted
½ cup shredded fresh coconut
½ cup coconut cream
1 tablespoon Malibu liqueur
½ preserved lemon, flesh only, finely chopped
½ cup orange juice
Wash and dry the mixed leaves, Place into a glass bowl with the parsley, coriander, mint, basil, orange, grapefruit and olives. Toss together.
To make the dressing, place all the ingredients into a small bowl and whisk well.
Just before serving, sprinkle the salad with shredded coconut and drizzle with dressing
