Serves 2


1cup tomatoes charmoula sauce

1cup oyster mushrooms

4 eggs, lightly whisked

Salt and pepper, to taste

100g (3 ½oz)gorgonzola

100g (3½oz)cheddar

120g (4oz)camembert

100g (3 ½ oz) goats cheese

1tablespoon chives, chopped


Heat a Tajine over a low heat, line the bottom with the tomatoes charmoula sauce, arrange the mushrooms on top, then cook for 2 minutes until bubbling. Pour over the eggs, making sure to spread evenly. Season.

Shave gorgonzola and cheddar over the top to cover the eggs, arrage pieces of camembert and goats cheese on top of this, then place the lid on top and cook for 5 minutes until the cheeses are melted.

Sprinkle chives over the top and serve with crispy baguette or bread of your choice.
